4626.0375 SLACKING TCS FOOD. 3-501.12

Frozen TCS food that is slacked to moderate the temperature must be held:

A.

under mechanical refrigeration that maintains the food temperature at 41 degrees F (5 degrees C) or less; or

B.

at any temperature if the food remains frozen.
