4626.0840 EQUIPMENT, FOOD-CONTACT SURFACES, NON-FOOD-CONTACT SURFACES, AND UTENSILS. 4-601.11

A.

Equipment food-contact surfaces and utensils must be clean to sight and touch.P2

B.

The food-contact surfaces of cooking equipment and pans must be kept free of encrusted grease deposits and other soil accumulations.

C.

Non-food-contact surfaces of equipment must be kept free of an accumulation of dust, dirt, food residue, and other debris.

D.

Water filters used as part of a vending machine must be cleaned or replaced according to the manufacturer's instructions.
